Japanese chef Nobu honored in U.S. culinary awards (http://www.japantoday.com/e/?content=news&cat=1&id=214571)

Matsuhisa opened NOBU in partnership with actor Robert De Niro in south Manhattan in 1994. After a huge success he continued to open restaurants in cities such as London, Milan and Tokyo.

Always nice to revive a 4 year-old thread. Here's a profile of Nobu Matsuhisa where he rejects the "fusion" label. I can't recall him rejecting it when it was in vogue.

Star chef Nobuyuki gNobuh Matsuhisa is an amiable, mild-mannered fellow who betrays none of the wild temperament of many fellow top-flight cooks. That is, until you mention the F-word: Fusion. The man who popularised Japanese dishes in the West principally by cleverly combing them with unheard-of South American ingredients breaks his cool if you describe his creations as anything but straightforward Japanese. gNobu comes from Japan, I use Japanese ingredients, Japanese techniques and Japanese flavours,h fumes the 57-year-old. gI am 100 percent Japanese. gMaybe the presentation is different, but that is because of fashion -- food is like a fashion, like the colour of the coat youfre wearing.h

gJapanese chefs are very traditional, they donft veer to the left or the right,h interjects managing director Richie Notar. gBut Nobu has travelled, and as any good chef should, he utilises his experiences. If he shaves black truffles on a black cod does that mean he has to describe it as a Japanese-Peruvian-Italian restaurant?h...more... I ate at Nobu in Vegas. It's INSIDE the Hard Rock Cafe of all things. I was very impressed with the food, it was delicious. We all had to chip in over $140 per head.

WORTH IT! :)

The reason Nobu even has the place in Tokyo is after he opened on the west coast De Niro asked him why he had not opened a restaurant in Japan and Nobu told him he just didn't have the dust because of his new places. De Niro then said that it was not right because he was a Japanese and should have a place in Japan. De Niro then fronted half and the joint venture in Tokyo was born.
