Non-Melting Ice Cream

The Yomiuri reports (Japanese) that Healthy Lab Japan, a division of Japan Seaweed Foods Laboratory, has developed a soft ice cream which it claims will not melt for about an hour. The picture above shows a fresh cone alongside a cone prepared an hour before. The picture on the right shows the one hour comparison with ordinary soft ice cream. The lab came upon the recipe by chance when they were doing some research on okara which is a by product of tofu production. The "ice cream" consists of around 40% okara which also means it is lower in calories. If you want to know how it tastes, you can buy it online here.

Personally, I do love Soy Beans and all that good stuff, but Ice cream melts, kinda fun, licking all of that dripping milk. But I do have to admit that thinking about the ingredients that keep the ice cream from melting, does make me think that kind of stuff was probably manufactured in a back alley around Southern China.
