The Game Boy platform is really versatile. I was on a R&D project two years ago to use it as a cheap industrial interface. The LCD is decent and the best part is all development software is free and lots of examples and info on the net.
You can actually play video on it if you buy a memory module.
There is a company that has a digital/analog interface to use the GB as a data logger.
