Actually what wine is not the appropriate question. Which part of the anatomy is being served it the right place to start. The more tasty and tender organs, liver, kidney, ovaries, should be served with a light red wine, not complicated background, like a 1993 Red River Classic Bourdeaux. When progressing on to the more delicate and light flavored organs (brain, testicles, etc.,) switch to a semi-sweet Chardoney to cleanes the pallate.....!
Stay on the bomb run boys. I'm goin' to get them doors open if it hare lips everybody on Bear Creek.

I'm glad you asked, gboothe. Too often we neglect the finer points.

As homesweethome was suggesting, essentially, it depends what you're cooking, and for who, as to the appropriate beverage to imbibe.

In this instance, the meat was only being seared to stop the smell - it wasn't for consumption. So, it's more of a cold beer moment than a wine occasion. eg: Suck on a beer, sear a finger. Swig, sizzle. You get the picture.

Further more, proper etiquette dictates having a few extra lagers in the fridge, ready for the investigating officers when they eventually run out of FG's on stolen bicycles to chase and show up to take the confession (a must in any Japanese crime). After all, you may be a matricidal maniac, but that's no reason to be uncivilised.

And don't forget it's rude to pour your own glass. This may be you last "orange whip" in quite some time, so it's best to get it right.

Ahh, the dictates of proper etiquette! Thank you so much! I had me Mums-in-law in mind and without your informative post, I would have gotten it all wrong! Unimaginably, I would have just poped her in the microwave with a shouchu oyuari and that would have been that.

Thanks to your quite educational and timely piece, I have just sent her to the Sakaiya to pick up a case of beer!
