Village Turns Rotten Cabbages Into Gourmet Offering

A group of housewives in Tsumagoimura, Gunma Prefecture, has developed dressings for shredded cabbage to promote the vegetable, a local specialty that is grown in the hills surrounding their village...The vegetable is usually seen as a side dish, but the housewives want to promote it as a main dish...In some production areas, cabbage was left in fields to rot because the abundant harvest this year caused the price to tumble. But Masami Furuhata, the group's representative expects the dressings will have cabbage flying off the shelves. "We always eat fresh cabbage, and we put our cabbage-eating experience to good use. We'd like many people to enjoy healthy, fresh cabbage," she said...more...
