I much preferred a place in downtown Kyoto that served a nice cleaner broth with really proper Chashu, but none of my friends of any kind would take that over the filthy gut rot tonkotsu at the cheap stall farther up the street. Most Jpn called it Assari, though that might be a reference to the taste and not the actual name. Those heavy tonkotsu places stink like somebody died, and dropped a big stinky when they did.

I prefer tsukemen the best but I'll take shoyu or miso over tonkotsu anyday.

Diners at Michelin-starred Japan eatery get food poisoning

A Michelin-starred restaurant in Japan closed temporarily after 14 people got food-poisoning on a fancy Japanese-style meal there, and an investigation into the cause is continuing.

The Kanagawa prefectural government said six men and eight women complained of diarrhea and stomach pains after eating at Kita Kamakura Saryo Gentoan on June 11.

Their menu offerings included squid, jelly with sea urchin, pumpkin cooked with fish, eel and sweets, according to the prefecture.

Three other Japanese chefs got a star for the first time. Ryunosuke Naito's Pertinence and Takayuki Nameura of Montee the Pertinence - both in Paris - got the nod.

Takashi Kinoshita, who cooks at the Chateau de Courban in northern Burgundy, also made the grade.

"Japanese chefs have great technical skills and their cooking can be extremely precise," Mr Ellis said.

"France and Japan have lots in common, particularly in respect for ingredients," he added.
