Private Ramen

Fukuoka-based tonkotsu ramen chain Ichiran have a few restaurants outside their home territory but all in the Kanto area. One well-known location is on the other side of the street from the Hotel Ibis in Roppongi. They are now, however, planning to develop some sites in the rest of the country. One unique feature of Ichiran's restaurants is the presence of individual partitions along the counter. The owners says they have such confidence in their ramen that they want everyone to be concentrating on nothing else when they eat there. Each booth has an order sheet (below) which further allows each customer to customize their order. While their interior tends to mean that men drink less than in the average ramen joint, Ichiran has proved popular with girls over the years which has helped cement their reputation and business.

I'm a huge fan of Ichiran Ramen here in Kyushu. I especially enjoy how many of the locations are open 24-hours (like White Castle in the US) and how you have so many options for seasoning, noodle texture, and what not. Other joints in the region will allow you to chose your noodle texture, while others will give you tables covered in various seasonings (goma, garlic, and ramen tare). Ichiran takes the fuss out of the ordering process.

The Ichiran at Canal City in Fukuoka City offers a sort of Kumamoto-themed menu presentation. The ramen includes a sliced egg and there is also an option to add a kind of vinegar seasoning that is soften the garlic seasoning.

Many of the locations even have English-language menus.

There ARE better bowls of ramen in Kyushu (Ibudou in Fukuoka, Minzu in Kitakyushu [the guy in Minzu actually seasons your ramen based off of his perception of you], and even the Ramen Outlet in Tosu), but I would rank Ichiran as the best chain ramen joint in Japan.

I went to their shop in Ueno. Beforehand it was billed as "peep show" ramen to me. But there is indeed no show. As I remember it was not bad.

Yeah, I can read the Japanese on the menu too. That doesn't tell me much though. I don't know what a white onion is either. BTW, aonegi and green onion are not the same thing.

isn't white onion regular ol' "tama negi"? and green onion the long one, made famous by booker t. and the mg's?
