I thought I read that all tuna only became popular after the 60s?

That's right. It wasn't eaten as much in the Edo period because, like salmon, it needs refrigeration.

I'm obviously just an uncultured hairy barbarian, but I've always thought maguro simply tasted better than toro. I want to eat a piece of fish, not a stick of butter.

Sorry to be pedantic, but the samples for the most recent survey and the previous surveys are from different target audiences, which makes me wonder whether that isn't responsible for (or at least a factor in) the changes.

The whole tuna thing is an invented custom, just like all the other post-war "traditions". I recall Mulboyne posted an article about how in the '70s JAL was flying all this cargo to the US, but flying back with empty planes (trade imbalance, anyone?). Someone got the idea to put Grand Banks tuna in the planes on the return trip, as they were cheap and plentiful fish. Boom! Japanese "traditional" sushi...
