However, even though I usually know what I want to eat, sometimes the waiters will ask me a question I don't understand and they don't seem to be in any phrasebooks I own. I've started asking some of these terms and I wonder if anybody here could help me complete / correct the list? or share a good website?

To give you one answer, though, there is a "ramen emporium" in Shinagawa with shops for seven "masters of ramen" from around the country (originally linked in this post). Go out the Takanawa exit of Shinagawa JR Station, turn left along the main road and they are under the tracks a few minutes up the road. Saijo specializes in Kyushu Ramen. Rightly or wrongly, I've also always associated tonkotsu with Kyushu and Nantsutei to the far left specializes in that taste.
