Visa run to Korea planned. How long does one have to stay out of Japan? Meetings booked with Japanese companies for mid December as excuse to come back. Current visa expires Dec.10th. Planning on leaving Japan on Dec 8th, and coming back on Dec. 13th. Is it gonna work?

You might do a quick turnaround and have no-one ask any questions at immigration. However, immigration can refuse entry to anyone who looks like they are using serial short term visas as a cover for long term residence in Japan. You can be refused even if you haven't broken the terms of any visa issued to you previously.
You can help yourself by:
(1) Having a return ticket or some evidence that you have a flight booked to leave Japan.
(2) Carrying an invitation letter or itinerary showing why you are visiting Japan again. You can make it up but it ought to be verifiable so an entry like "Dinner with Emperor" is not a good idea.
(3) Having enough luggage with you to indicate that your belongings aren't really waiting for you in Japan somewhere.
After that, it's largely the luck of the draw.

I think you have already answered the question for yourself, as you realize the situation is strange enough to merit an FG posting. Immigration decisions are made by the officer at your port of entry, and none of us know what that officer will say. However, if I were the officer looking at a guy with 120kg of luggage, I'd be awfully suspicious he was planning to stay in the country, even ignoring the discussion about employment. You sure as heck better have a paid return ticket to show.

Currently he's on campus at Saitama University everyday using the wifi pretending he is a "student". I'm from the same university in the US that the guy came from on an exchange program 5 years back, so that's how I ended up talking with him. (A bit of an odd fellow but friendly enough.) Some of the other students thought he was just a lost exchange student that still hadn't left or found a job after all these years. (Creeps some of the girls out for sure)
So from what he told me he has a few days left on his visa and he is planning to head back to the states since he is totally out of money. I guess really did get all that shit in the country cause he asked me if I would pull some bags to Narita with him cause he doesn't know how to get his shit there. The buses usually only allow 2 bags and he's got like 6 full size suitcases (or so he claims) and I guess a lot of weird junk he bought in China (if you saw the guy's 'jewelry', for lack of a better term, you'd see what I mean that he has something going on about Chinese farmers, etc ) ..
