Oh and as far as I know the best sushi places are almost all if not all omakase. They will generally ask you if there's anything you don't like or if you have any allergies but otherwise you get what they serve. Just like a prix fixe menu at a French restaurant. You can usually order a la carte at the end if you didn't get enough. That isn't just because they're being stuck-up assholes. Top sushi places only use seasonal fish and only buy the best of what's on offer on a particular day when they go to the fish market so they generally have a limited selection. If everyone at the counter during the first seating just kept ordering maguro, they'd run out. It's a way of rationing the stock among the customers. Of course it's also because they want you to eat what they've deemed to be the best fish. Kind of like how Peter Luger in NYC won't cook you a well done steak period. They don't care what you think. They think it ruins the meat. They're right by the way. :mrgreen:

Yeah, I have always understood the rationale for Omakase, and it's often a great deal especially in Asakusa and Sanya. Sadly, I'm a picky pussy. I don't eat roe or sperm because of what they are, but most of my pickiness is texture related. No hotate, no raw shrimp, and defintiely positively NO Uni. It's sort of like a post Green Eggs and Ham thing. I do not like them, no I don't.

BTW, great metaphor with the Chicago steak there. Any North American would get that one. I'll use it next time I am being badgered about The Freshest Soosheeeee.

I imagine someone saying, "It literally tastes like they just cut this off the cow an hour ago." :lol:

I think there's definitely something to the whole aging thing. Before I knew that I wondered why the sashimi in Korea wasn't as good. In Korea they keep the fish alive in tanks before you order it so it really is super fresh and that's the problem. By the way, some fish are best super fresh. So are shellfish, shrimp, etc.
