Not so sure... I would not pick a fight with any of the hospital nurses I know, be it physical of conversational...
The only exception are... maybe... NICU nurses who seems to be on the fragile side. But for all the other fields, the yamato nadesico kind are weeded out quite fast.

Ornamental nurses can still be found in private clinic/dentist/dermatologist...

The only explanation I've heard which might be partly true is that they need to be strong enough do things like lift patients. I've seen plenty of slim cute girls working the front desk in clinics but I don't know if I've ever seen a slim cute nurse.

Ex-gf (who I still keep in touch with) was a nurse at Osaka University Hospital, now working at some hospital in Kobe is almost unhealthily thin.

Otanko nurse, on the other hand, definitely fits the chubby stereotype, although that might have to do with drinking a ton of booze more than anything else.

I teach about 150 of them a year and the ones I teach are not particularly rotund, so I assume the ones you have been seeing have been filling in (opposed to being filled in) on the job.
