...and everyone knows, the way to identify the best sushi bar is to find one where the Japanese don't go.

A few problems, it seems:

TMC: 50% of Japan restaurants in Moscow serving less fresh dishes
About half of Japanese restaurants in Moscow surveyed are offering sushi and other Japanese dishes whose freshness is below government-set levels, Russian news media reported Friday. The government's bureau in charge of economic crime carried out the survey, prompted by the outbreak of a mass food-poisoning incident at a Japanese-style restaurant, the reports said. Bureau officials have found numerous foodstuffs several weeks or months past their expiration dates when they examined freshness of sushi, sashimi and other items, according to the Interfax news agency an other local news outlets. The government has decided to file criminal complaints against those restaurants which continue to use expired ingredients even after being ordered to improve operations. Sushi and other low-calorie Japanese foods are popular among health-conscious Russians in Moscow.

Damn - I will be in Moscow next week. Note to self - no Japanese restaurants.

BTW any suggestions of must see things in Moscow. Am only there for a few days on business but there will be a few times when we can escape. Naturally the whole Red Square thing but I have been too busy to look at a guide book.

This sounds a lot like the Chinese-Japanese restaurants in Canada. Cutting corners wherever they can trying to make it as cheap as any Chinese food. when I go to a sushi restaurant I go straight to the counter and speak with the chef. If not Japanese, I walk right back out. I'm getting sick and tired of Mexicans making sushi in the US or Chinese and Vietnamese posing as sushi chefs in Canada.

Writing about sushi is always a slight struggle, since generally reporting either that they made you ill or that they didn't is as far as it seems sensible to go
