I don't think "most" formal sushi restaurants serve no soy sauce but I have certainly been to a number where it isn't served - the chef having determined that you shouldn't need it.

Never bite in half and put remainder back on plate.

I remember seeing an interesting video about this subject. Someone asked why one serving of sushi (ichininmae) is two pieces. They did historical research and found an old ukiyo-e book full of pictures of sushi back from hundreds of years ago. Back then, each piece of sushi was HUGE, they were like monstrous rice balls with a half a fish slapped on the side. But women complained they couldn't eat them, their mouths were too small (I sensed a nascent nihonjinron here). So they started cutting the big sushi in half if customers asked for it. Eventually so many people asked for them to be cut in half, it was just easier to make them in two pieces.

I was in Fukuzushi a few weeks ago and they cut even the normal-sized nigiri in half for my friend. She wasn't best pleased but didn't want to say anything. It's the first time I've ever seen that. I can only assume that they developed the custom because they served so many foreigners over the years (they opened in 1968 Roppongi) and many of them would have been uncomfortable eating it whole.

how about just eat the fish and leave the rice?

Postby tidbits » Sun Jul 16, 2006 2:15 am

I couldn't access the link anymore. I am just wondering if it is considered rude to just eat the fish and leave the rice when you are already quite full but still want to taste the fish. I understand some Japanese do that especially in Kaiten-Sushi.

My understanding is that this is very bad manners. Plus, couldn't you just order sashimi if all you want is the fish?

You wouldn't say that if you saw how low it keeps my bill when they come to count plates.

Sorry, AK, missed your point. I am trying to increase my total post count by 20% today, and all this activity is making me disoriented.

#1 eating it instead of feeding it to the dogs...

My cats are big time onto fried chicken... To the point where they'd get a job to buy it themselves if I was not providing them. (especially the Chicken Mc Nuggets, back home it was the friday night diner for Lanxade)

One day we brought them some KFC...

They smell it... look at it... and Douin (the japenese one) did the litter burial gesture to try to cover it. not a bite, not a chew... booth of them... I think we were lucky the didn't vomit on the carpet...

When I reach the point of taking them outside in an old shopping cart full of junk you'll have the right to put me a bullet in zee head...
