Peanut Butter Sushi

[floatr]Image[/floatr]NewsSentinel: Girl’s peanut-butter ‘sushi’ in sandwich contest top 10
Alexandra Yoder, 12, found a way for crepes and peanut butter to replace seaweed and eel in a sushi roll. Technically, the rolls are sushilike, replacing fish with fruit, soy sauce with chocolate yogurt and adding a layer of peanut butter to the crepes. Yoder’s concoction, called Peanut Butter Rolls “Sushi Style,” won her a slot in the top 10 finalists in the fifth annual Jif Most Creative Peanut Butter Sandwich Contest...For Yoder, a sixth-grader who attends St. Vincent de Paul School, the creation was simple. “I pack my lunch everyday for school. I usually pack a peanut butter sandwich, and I love to eat sushi,” she said...Yoder wrapped Jif peanut butter, granola, strawberries, bananas and strawberry cream cheese inside a crepe. To top it off, she placed two pretzels on the side for chopsticks and chocolate yogurt in a bowl for dipping. Michael Yoder, Alexandra’s 13-year-old brother, enjoys eating his sister’s creation. “It’s not something you have everyday. It’s kind of exotic,” he said....more...

If you nix the cream cheese, that's not an entirely unhealthy snack!

That's pretty awesome! I had to pack my school lunch from the time I was about 10, but it was never anything as creative or awesome as that-- usually just some lunch meat and a slice of cheese thrown into a paper sack with a juicebox 5 minutes before I had to be out the door (I know, Japanese housewives all over the world are collectively shuddering right now). She must be one of those morning people I've heard about that like to get up early and actually give themselves enough time to get ready.
