It may seem mean to sue a school for using a similar logo, but basically because of the way copyright/trademark law works, Apple has no choice but to do so. They have to actively protect their right, or they lose it.
Reports indicate the school is using other Apple trademarks without authorization on their website and other materials. Apple is very picky about that.
Apple has pages and pages of rules about the use of their logo, and a few unwritten ones. I'll give you an example. I once made a presentation to Apple execs, back around 1986. I decided to show off, I was fooling around with some early 3D packages, so I started my presentation with a full screen animation of the new flat (non-rainbow) Apple logo rotating. After the presentation, one of the VPs came over to me, and excitedly asked how I made the logo rotate. I explained, and he said, "That's really cool! Now don't EVER do that again! You just don't mess with the logo!"
