I know it's perfectly acceptable to eat sushi by hand and the old farts who spend everynight at their local sushi bar often do, but from what I've seen most Japanese people use chopsticks to eat their sushi too.

The only person I know to stubbornly insist on eating sushi with their hands is a nisei living in the states. I rarely encounter it in my day-to-day existence here in Tokyo, although I suspect it may be more prevalent in other parts of the country (admittedly, a low bar to pass).

I have noticed the rice falls apart a lot more easily when someone takes me out to an expensive sushi shop, as opposed to when I hit Atom Boy (what is it now, Nigiri no Tokube or something like that) for a big feed...I usually eat more with my hands at the pricey places, and with chopsticks at the cheapo joint when I'm paying the tab.
