Osaka & Hiroshima tie for world's 4th best "pizza"!

Postby Samurai_Jerk » Wed Apr 27, 2011 5:49 pm

Yahoo is really pushing it with this load of bullshit. And not this isn't more Japan (pizza) bashing from me.

#4: Osaka and Hiroshima, Japan
Sometimes called the "Japanese pancake" and at other times called the "Japanese omelette," okonomiyaki's flat shape and assorted ingredients have also earned it the nickname, "Japanese pizza." Even the phrase okonomiyaki loosely translates to "cooked as you want it," which sounds a little like what makes pizza so special in the first place. But what exactly is okonomiyaki? At its base is batter (made from flour, eggs, water, cabbage and cooking stock) paired with your desired combination of cheese, vegetables, fish and meat. In the city of Osaka, where the most popular version of the dish originated, all the ingredients are cooked together (by grilling on both sides) before the pizza is topped with a sweet brown sauce, mayonnaise, katsuobushi (bonito flakes) and aonori (seaweed flakes). If you're dining in Hiroshima, the cook will fix your okonomiyaki batter first before layering on the other fixings.

Where to Taste: Several Japanese eateries earn a shout-out for their "Japanese pizza." Osaka's Mangetsu restaurant serves an okonomiyaki original sauce that "tingles and tantalizes your taste buds to the point you can't stop eating the food that's covered in it," according to a satiated Virtual Tourist. And foodies across the web recommend Hassho, a Japanese chain scattered through Hiroshima Prefecture, for the best sampling of that city's style of the dish.

How can you talk about Japanese pizza without mentioning such delicacies as corn, mashed potato, broccoli, mayonnaise or camembert cheese? Sacreligious!!

I wonder how some of Japan's award winning pizza napoletana chefs would feel about this.

lol, have to wonder if the person who wrote this has actually eaten or made it before. Its base is yam.

Right, depending on who makes it the balance is going to be different but generally speaking the more yam the better up to a point.

Not many people make it with fresh yams because it makes your skin itch.

From my experience having lived in horoshima and now kansai and also with a hiroshima-ken born wife the yamaimo is actually not used so much at home, in our kitchen at least. Flour is always there and yamaimo is expensive (if I remember right) and doesn't have a lot of other uses. If I make it myself as taught by her it's just flour, egg, water, cabbage, not even the dashi. That's how she learned to make it too as far as I know.

You realize that sharing your okonomiyaki recipes might start a FG fight.

Well let's bring it on. My favorite lately is to cut up Johnsonville "Beddar with Cheddar" (sic) sausages and put them into the mix. Got to be mixed into the batter completely though, not on the bottom like pork would be, otherwise gets too charred and the beddar cheddar (sic) leaks out.

We get the pizza flyers often at my outlaws' and the pictures always look amazing. However, I have never had a delivery pizza that I liked in Japan. The odd restaurant that serve thin crust pizzas are good but the delivery ones are not to my taste.

In Tokyo there are places that deliver that style but the problem is you end up paying a lot of what's essentially a snack that leaves you hungry.

Also since this was zombied, I read an article years ago about an American in Kansai (Osaka? I think) who started his own pizza biz to deliver real american style pizza. Does anybody know what company that is?

I really fucking hate okonomiyaki. Vegetables have no business being in or around a pancake... lots of syrup, sugar, fruit, bacon, cheese, chocolate and nothing else dammit!!

Keep your lettuce, your broccoli and your mayonnaise well away from my pancake or people get hurt.

 Reputation bullshite for Tsuru....

Nonetheless, this opinion shows you are a barbarian with no appreciation of the Japanese culinary tradition. As every Japanese knows, sweets such as strawberries or peaches and cream are best served in sandwiches.

Which is why it is not called pancake. It's called Okonomiyaki. How fucking idiotic is that?
