If I have a huge transfer to do I usually end up cheating by doing one of the following:
1) Connect target drive(s) to source system
2) Connect source drive(s) to target system
3) Use an external drive via eSATA or USB.
#3 is generally the easiest, especially with eSATA. Tends to be faster than gigabit ethernet too.
