am sure Pongi Tono and the rest of you lot can do a *lot* better than this, but thought i'd up some ways i've found of getting shots/footage

wear headphones - as i always have volume on max this can either deter ppl from hassling you about shooting, or at the least, give you time to get the shot you want - note tho if you are filming the cam will pick up the noise - so you could just leave the volume off- this works well against eikwawa leeches also.. you could also plug them into the camcorder i guess if the person is dumb they wont figure you can hear them

smile and bow - hard to keep your balance / shot in perspective - i find lining up a shot, doing a quick smile/bow then take the shot/s works well specially if you make out you cant understand - this part ripped from one of Pongi Tonos vids outside some store - hilarious btw..

carry a can of grog - if you look drunk and leer most employees will stay the fuck away, and go for the manager/backup so get your shot/filming done then get the hell away - for very fcked gaijin get that footage too - only applies if you have guts like our lord Pongi Tono

focus on something a good few feet away, get a general focus then whir around and take your shot - this only really works if you dont mind having a cam around your neck / shoulder and dont mind looking like a tourist - i find opening a cam bag and taking out your equip gets too much attention

if you arent alone get your mate to pose or whatever but focus on the subject instead! this requires you buying them a beer or calpis or whatever tho.. not good for freeter gaijin!

if confronted by cops/security/ganki oyaji take the shot, or footage, and just as they are about to put hand on lens say something like "nippon dai suki!" or "honto ni gomen nasai, gaikokujin dakara, koko dame?" make sure you got the shot or get it while saying it tho.. ^^
