It's weird how besides offal when it comes to yakitori chicken skin seems to be the one that grosses so many FG out. I am pretty sure that my objection is the cooking method, not the item. I love properly roasted skin, though a touch of meat does give it balance. What I cannot stand is that rubbery grease texture they so adore, and I have only met one Yakitori owner that would grill the skin to my liking, which is to say just this side of charcoal. FTR, it's the old dude at Kaga Daiko behind the Katamachi scramble in Kanazawa. Yummy bird to be had there. If you take an obviously much younger girl he goes the extra mile for you too, which I always found gracious.

PS offal is not a food product. It's Danish for garbage.


If they tried the skin and didn't like the way it was cooked I would sympathize. However, I've met A LOT of FG who won't even give it a try and are grossed out by the concept. That I don't get. I'm not a fan of the places that make it rubbery either and there are a lot of them. However, there are also plenty of places that do cook it up nice and crispy and it's awesome. You can also ask for yokuyaki just to be safe.

I grew up eating liver, steak and kidney pie, and mystery meat soup from China town, so offal has never bothered me that much. However, when not prepared properly it can be pretty bad. The places that know what they're doing are excellent though. I've converted some people by taking them to the right motsuyaki-ya.

Very few places in Kyoto I am taken to will take customer requests like that. It's like asking a French chef for ketchup, apparently, so asking usually just gets snorts, raised eyebrows and no crackling crispy skinned joy. And then they get angry when I don't finish it or dish it off to whomever I'm with. The last few visits I have found many of the nouveau bistros in Kyoto to be rivalling Vancouver/West Coast hipster bistros for shit service and douchey attitudes:

And that's said knowing full well that Japanese Service is oxymoronic as often as not.

dude... good choice on defending my booze choices, but obviously my pallet is pretty fucked. I throw hot sauce on everything, could eat menudo every day, don't like innout (one menu item FTW, but yes it is delicious), don't like sushi (rice and slab of fish... fuck off), and I regularly make eggs mixed with rice, ketchup and tabasco.

Pretty fucked IMO, but I am not obease, have endurance, sleep 4 hours a night, and my liver is still fucktioning.

If you like menudo, you should be OK with motsu. Just throw a lot of shichimi on there to spice it up.

I wouldn't mind pot-au-feu with some actual chunks of beef in it. ワイナー is not and should not be the main ingredient. :( You can buy the base in those foil liquid packs like the various nabe bases come in, but for some reason the rice-cooker believes it's of Russian origin and they fill the dish with a bunch of cheap cocktail wieners (as shown on the package label) rather than some actual stewing meat . :cry:
