As a dish, tamagokake gohan (literally "egg poured over rice"), is simple and tasty. It is made by cracking a raw egg into a bowl of hot rice, stirring the mixture into an even consistency, and then adding a few drops of shoyu soy sauce for seasoning.

I love this dish, but I never had it while I was working in the United States because I was warned of the risk of food poisoning from eating raw eggs. You can imagine my delight when I savored it with a Japanese egg upon my return home.

Japanese eggs are delicious, but our country's self-sufficiency in eggs stands at a lowly 10 percent or so...more...

The root of that advice was a British food scandal in 1988 when the Health Minister said that "most of Britain's egg production is infected with the salmonella bacteria". Salmonella is killed by cooking but raw egg was off the menu in Britain for a while. Japanese restaurants no longer served it with dishes like sukiyaki. It wouldn't surprise me if word got around that all raw foreign eggs were bad. The Health Minister probably exaggerated the risks but there was a problem. In 2006, a survey found:
...far higher rates of salmonella on the Continent than in Britain. Checks were carried out at 5,317 hen-laying farms in 23 countries; those in the EU and Norway. The proportion of UK egg farms with salmonella was 11.9 per cent, the sixth lowest. Swedish, Finnish and Danish farms had extremely low figures, between 0 and 3 per cent, probably because of the cold. But salmonella was found in 73 per cent of Spanish farms, 77 per cent of Polish farms and 79 per cent of Portuguese farms. In France the figure was 17 per cent, in Germany 28 per cent and in Italy 30 per cent. The actual level of salmonella in eggs from these farms is far lower. The Food Standards Agency's testing of 1,744 boxes of imported eggs on sale in London and the North-west, found salmonella present in one in 30 boxes.

The government still advises the elderly, young, pregnant and sick to steer clear of raw eggs.

I have no idea what the US dairy industry is like but I'm not sure that Japan's dairy industry sets the gold standard. I suppose it is possible that there are fewer cases of salmonella poisoning in Japan but there certainly have been cases.

Food poisoning from raw eggs is fairly common here as well. The whole "Japanese eggs are safe/different" is just more Nihonjinron.

Considering the population differences, it doesn't seem to me like there is any huge improvement in the number of Japanese cases of Salmonella and other bacterial food poisoning. Couldn't unfortunately find data for the same period between the U.S. and Japan but comparing these two periods we are looking at:

Japan
27,741 in 1999
32,417 in 2000
15,753 in 2001
17,533 in 2002
Total 93,444 bacterial food poisoning cases over 4 year period.
Salmonellosis accounted for
43% of 27,741 in 1999=11928.63
21% of 32,417 in 2000=6807.57
31% of 15,753 in 2001=4883.43
33% of 17,533 in 2002=5785.89
=29405.52 cases of salmonella over 4 year period

U.S. 1993-1997 # of food poisoning cases 86,058
86% of which were bacterial with Salmonella accounting for the largest portion of this.
86% of 86,058 = 74009.88 bacterial food poisoning cases over a 5 year period.
Salmonellosis accounted for
7142 in 1993
2858 in 1994
8449 in 1995
12450 in 1996
1731 in 1997

32630 cases of salmonella over a 5 year period at more than twice the population of Japan.

It is officially safe to eat runny eggs, the Food Standards Agency have confirmed.

Almost 30 years after the salmonella crisis, the food safety watchdog have confirmed that vulnerable groups previously thought to be at risk from eating raw eggs can now freely consume them.

Infants, pregnant women and the elderly had historically been advised to steer clear of soft boiled eggs, as the raw yolk was assumed to contain the salmonella bacteria which could subsequently cause a serious infection.

The new advice first came to light in a report published by the Advisory Committee on the Microbiological Safety of Food (ACMSF) published in 2016, which revealed that the presence of salmonella in British eggs had “dramatically reduced” in recent years.

The FSA have now revised their guidelines on the basis that the risk of UK eggs containing the salmonella bacteria was “very low.”

Truthfully, cooking eggs makes the protein more bioavailable to humans. Eating them raw wastes about half the protein in them leaving only some nutrients and a whole lot of fat. I don't know why I bother tho, this a country that hates crispy bacon....

I noticed a correlation between eating eggs and pain in my joints. Nothing serious, but it felt a bit uncomfortable. It might be something of a light case of gout.

I found out when I did not eat eggs for a week due to a changed scheme in my holidays, and then the pain went away. When I googled, it turned out that eggs (especially the yolks) may cause inflammation of joints.

I'll take my eggs raw, fried, hard boiled, any way except balut BUT when I was back home visiting family last month, my Aunt was bitching about half-boiled eggs on caesar salads becoming a thang in several countries. (I want my eggs cooked! she says)
