As you know, COSTCO Japan is very, very kimagure /気まぐれ about their stocking any product.
At the Kanto's COSTCO outlets {Kawasaki/Machinda/Makuhari}, veal bratwurst is standard and available (sometimes labeled "herb bratwurst" or "garlic bratwurst"}.
However, on my next trip to the States {vaccine willing}, I plan to buy multi-kilogram restaurant/commercial packages of sausage spice mixes for: Italian sausage, bratwurst, N. German sausage, etc.
Back when I was younger, I used to hunt deer and elk in Colorado and making "sausage" with commercial-grade sausage spice mixes was the only way to deal with the fact that only 20% or deer or elk was good enough for grilling as just a plain "steak."
