Oops, I forgot about Macau... (add one more for me) HK and Macau I would call them different countries as they were not part of China when I visited them the first time but they are called the one country two systems now. Taiwan is definitely a separate country.
Scotland is part of the UK - so just one country can be counted.. you don't need your passport (but you need your vaccinations - jokes) to cross into Scotland but you do when you go to Macau or Shenzen from HK.. Ireland is a separate country but Northern Ireland isn't. Wales is part of the UK as well.
